Mediterranean and Middle Eastern cuisines offer one of the best beef stews in the world. Not only they are delicious but nutritious too since it is rich in vegetables, herbs, and spices.

One dish that I would like to share with you is a Turkish beef stew called Tas Kebabi or Tas Kebap. It is similar to most Middle Eastern stew dishes like bamia or fasolia, but the Turkish beef stew has a milder taste. I made this for my family, and this is one of their favorite beef stew in their life, and I am going to show how to make one.

Recipe Ingredients

Here are the ingredients you need to cook a delicious Turkish Tas Kebabi recipe:

  • Beef Fillet: The beef fillet is tender and tasty, making the stew juicy and full of flavor.
  • Potatoes: Potatoes make the stew hearty and soak up all the flavors, making it nice and comforting.
  • Carrots: Carrots add a bit of natural sweetness and a satisfying crunch, making the stew even tastier.
  • Long Sweet Pepper: Long Sweet peppers give a sweet crunch and bright color, adding a fresh taste to the dish.
  • Onion & Garlic: Onions and garlic make the stew taste really good by adding rich and fragrant flavors.
  • Spices (Cumin, Paprika, Thyme): These spices mixed together make the stew taste earthy, smoky, and a little herby.
  • Tomato Sauce: The tomato sauce makes the stew come together, giving it a tangy and rich flavor.
  • Tomato Paste (Optional): This will add strong acidic tomato flavor which will also help redden the sauce.
  • Water: The water will be used to add the beef and the tomato sauce to make into a stew.

Step by Step Instruction

Step 1: In a pressure cooker pot, I add oil and then saute onion and garlic till it turns translucent.

Step 2: Next, I added the beef fillet and gave it a quick stir for a few minutes before adding the spices

Steps 3 & 4: After that, I added the spices and tomato sauce, and then gently stir to combine. You can add tomato paste if you want to make the stew more red.

Steps 5 & 6: I poured water on the beef-tomato mixture and then the bell pepper. I didn’t chop or cut the bell pepper into pieces since it will automatically release its flavor during the cooking process.

Steps 7 & 8: Next, I cover with the lid and put on the pressure jigger valve. Once you hear the hissing or sizzling sound, let it cook for at least 30 minutes to let the beef become soft.

Step 9: While waiting for the pressure cooker to be done, I prepare vegetable oil in a separate pan on medium heat.

Step 10: Once the oil is hot, I add the potatoes and carrots. Gently stir and let it fry until it turns light brown. I only half-cooked them since the rest will be done by simmering in the stew.

Steps 11 & 12: Once the pressure cooker is done & the beef is tender, transfer the half-fried potatoes & carrots into the beef-tomato sauce mixture. Let it simmer for 5 minutes before turning off the heat. Adjust the amount of salt and black pepper for taste when needed.

Final Step: Serve it with Turkish rice and place the Tas Kebabi on top of it. Enjoy!

Tips and Hints

  • Add more water or beef stock if the stew seems dry or too little.
  • You can serve this dish either with rice, bulgur, or crusty bread to soak up the flavorful sauce.
  • Tas Kebabi tends to taste even better when reheated, allowing flavors to meld further.
  • You can use different types of beef cut like beef fillet or chuck.
  • If you don’t have a pressure cooker, you can use an ordinary cooking pot and cook it in low heat allowing the ingredients to simmer and the flavors to develop.
  • You can use other types of meat like chicken, veal or lamb.
  • If you like it spicy, you can add chili powder or red chili pepper.

  • 1.5 pounds Beef Fillet cut into pieces
  • 1 Whole can tomato sauce
  • 2 tablespoons of tomato paste optional
  • 3 cups of water or enough to cover the beef
  • 1 medium red onion chopped
  • 4 cloves of garlic chopped
  • 2 medium potatoes cut into cubed shape
  • 2 large carrot sliced
  • 1-2 red long sweet pepper
  • 2 teaspoon of cumin
  • 2 teaspoon of paprika
  • 2 teaspoon of thyme
  • Salt and Black Pepper for taste


  • Heat oil in a pressure cooker over medium heat. SautĂ© finely chopped onion and garlic until translucent and aromatic.

  • Add beef fillet, stirring until it starts to brown. Add cumin, paprika, and thyme, stir to combine.

  • Pour in tomato sauce, incorporating it thoroughly. Optional: add tomato paste for a deeper flavor.

  • Cover the beef with enough water and add a sweet long pepper to infuse flavors during cooking.

  • Seal the pressure cooker and cook for 30 minutes to tenderize the beef.

  • In a separate pan, fry cubed potatoes and sliced carrots until lightly browned, keeping them partially cooked.

  • Once the pressure cooker finishes, release pressure and add partially cooked vegetables to the stew.

  • Simmer for 5 minutes, letting the flavors meld together.

  • Taste and adjust seasoning with salt and black pepper.

  • Serve the Tas Kebabi over Turkish rice for a flavorsome meal.
