Regag or rigag bread is widely enjoyed as a popular snack or breakfast in the United Arab Emirates, commonly available in many street food establishments. Its texture resembles that of a crepe, and it is traditionally paired with accompaniments like cheese, egg, or honey. Also, they do offer a dessert variation with a spread of Nutella or any chocolate sauce.

I personally find regag or rigag bread delightful as it is light on the stomach and has a delicious taste. My favorite combination is the spread of egg and cheese, creating a perfect breakfast dish that pairs well with hot tea or coffee. In this recipe, I am going to show you how to make traditional Emirati regag bread by using an ordinary pan.

Recipe Ingredients

Here are the ingredients you need to make a delicious Regag / Rigag bread:

  • Flour: It makes the bread firm and gives it a nice texture.
  • Yeast: Helps the bread rise and become soft and fluffy.
  • Brown Sugar: Adds sweetness to the bread and feeds the yeast to make it rise.
  • Water: Mixes everything together, makes the dough, and activates the yeast.
  • Salt: It makes the bread tasty and controls how the yeast works.
  • Egg: It adds more flavorful when spread on top during cooking.
  • Cheese: It makes the bread taste savory which I am using cream cheese on top of the spreaded egg.

Step by Step Instruction

Step 1: Firstly, I combine brown sugar and yeast with warm water in a small plate bowl.
Step 2-3: Next, I poured the yeast-water mixture into the flour.
Step 4: Mix gently until it forms a soft consistency. Make sure it’s not watery or too dry. Cover it and leave it for 1 hour to grow.

Step 5-6: In a sizable pan, I take a portion of the dough and use either your hands or a dough scraper to spread it out.
Step 7: Now before adding the egg on top of the crepe, I whisk the egg with salt and black pepper. Spread it around gently.
Step 8: Next, I spread around it with cheese. And then flip it to the opposite side and allow a few minutes to cook.

Step 9-10: After that, fold it in half, and fold it again to make into a triangular shape. Transfer into the plate. Serve it with hot tea. Enjoy!

  • If the batter is too thick, add a bit more water; if it’s too watery, add a little more flour.
  • Consider adding herbs, spices, or even a touch of olive oil to the batter for additional flavor.
